Unique style of wine similar to the classical style Italian "Barolo" wines, which are matured for long periods in French and American oak
Bookings and Enquiries

http://www.salet.com.au
The Boutique Winery Salet Wines Cellar is located on the South Coast of New South Wales some three hours south of Sydney at Currarong.
The background reveals the wine maker first started making wine 25 years ago for personal consumption, until the year 2002, when it was decided it was time to enter the commercial market and offer the wines from a Boutique Winery.
The winemaker's ancestors come from Europe; and over the years has been fortunate to learn the art of making wine from his ancestors, winemakers, and relative wine making literature. Only small quantities are made, enabling additional time to ensure quality wine is achieved. Shaved oak hogsheads barrels are used, with the wine ageing in the barrels for an unusually extended maturation period; the 2003 vintage was in barrels for 42 months.
This procedure yields a unique style of wine not unlike old-style "classical" Italian Barolo wines, of course new barrels could not be used, as there would be an imparted excessive oak component in the wine.

Booderee National Park and Booderee Botanic Gardens are the names chosen by the Wreck Bay Aboriginal Community for the former Commonwealth Jervis Bay National Park and Jervis Bay Botanic Gardens.
Booderee is an Aboriginal word from the Dhurga language meaning 'bay of plenty' or 'plenty of fish'. The White-bellied Sea Eagle is one of the many birds you can see around the park. This large white and grey eagle is the guardian of the Aboriginal people of Wreck Bay, and is represented in the park logo.
The National Park and Botanic Gardens were handed back to the Wreck Bay Aboriginal Community in 1995. The Community and the Australian Government, through the Director of National Parks, now jointly manage the Park and the Botanic Gardens.

The wines of Cambewarra Estate, like the distinctive region in which they are produced, have an elegance and identity that are widely recognized. This is highlighted in our Chamboucin, which won a bronze medal in its first vintage in 1994 and has continued to accumulate many gold, silver and bronze medals in significant wine shows. Cambewarra Estate won the first gold medal awarded in Australia for our Chamboucin Port (at Cowra in 1998), and we have also won a national trophy for our Cabernet Sauvignon.
All our wines are vintaged at Tamburlaine in the Hunter Valley from fruit grown on the Cambewarra Estate. Our chief winemakers, Mark Davidson and Simon Thistlewood, have many years experience and exceptional skill which we draw upon to produce our premium wines.
We have also made a spectaular White port out of the Vedelho, everyone is thrilled with it and wanting more...
