We are proud to be the first in Australia to introduce a completely clear canoe. Our hire business in Huskisson has seen many tourists experiencing close encounters of a marine kind.
Five Irish visitors had dolphins playing directly under and around the canoes on our first day. Another activity group has been within two boat lengths of the mammals. Yet others have been able to witness a group of six giant stingrays as they fed around the Wollamia boat ramp.
People often see bait fish, flathead, cuttlefish, stingrays and the diversity of marine life within Jervis Bay.

Jervis Bay offers some of the most diversified scuba diving along the Australian East Coast, as a Marine Park; it is regarded by many as the southern alternative to the Great Barrier Reef.
The surrounding waters and parkland of Jervis Bay are all part of the 'Jervis Bay Marine and Booderee National Parks' and are home to a wide diversity of temperate water marine life (with a few visiting tropical species every now and again!).
We have over 30 dive sites both inside and outside the Bay, which can be visited at different times of the year. Due to the unique geography of the Bay, diving is possible all year round, even when conditions aren't always the best.

The Gunyah (aboriginal for meeting place, or place of shelter) is at the heart of the camp. Designed by Sydney architects, Nettleton Tribe, it is a chic space built high off the ground to enjoy the sea breeze and a wonderful position amongst the tree tops.
In Summer, the sliding doors open up for outdoor dining on the verandah, providing a bushy backdrop from which to enjoy meals and observe the goings on of our resident possums, sugar gliders and birds. In Winter, an open fire and candlelight bring warmth to the room, and cosy lounges are a perfect place for curling up on after dinner.
Our Chef
Hamish Gilbert swapped the bright lights of the city for Jervis Bay in February 2007
Originally from New Zealand where he first discovered his love of cooking, Hamish moved to Sydney in 2000 where he continued his training under Darren Simpson at Aqua Luna before moving to the Blue Mountains and honing his skills at the eponymous Vulcans.
Most recently, prior to leaving Sydney, Hamish was running the kitchen for Damien Pignolet at the Bellevue Hotel, sister hotel to the Woollahra Hotel and home to Bistro Moncur.
Hamish now brings this wealth of experience to the Gunyah dining room at Paperbark Camp where he brings the flavours of the Mediterranean to the South Coast with his modern European menus, and continues the paperbark tradition of sourcing local produce where possible to ensure the freshest ingredients and also support our local community.

Hawng Khrua Thai Restaurant Co-owners Colin & Marion,
Colin & Marion came to Huskisson on holiday and ate at their favourite Thai Restaurant. When the restaurant came on the market they made both a sea change and a career change and became passionate restaurant owner/operators.
Colin attended Nowra TAFE to hone his skills and together with Marion has travelled throughout Thailand attending cooking schools and soaking up the culture.
The Hawng Khrua Thai is open for diner from Monday To Saturday from 5.30pm (except public holidays). Our menu is quite extensive with over 50 items on offer.

Jervis Bay and Sussex Inlet Surf School is owned and operated by Jerry Brown. Jerry grew up in the area and has over 22 years surfing experience and plenty of local knowledge. He is teacher trained and also a Lifeguard Supervisor holding the high level Gold, Silver and Bronze medalions, Advanced Resuscitation, Senior First Aid, Defibrilation and Spinal Management certificates making your experiences all the more safer.
Jervis Bay and Sussex Inlet Surf School offers group and private lessons, five day packages, surfing trips/tours, team building, surf awareness, parties, school groups, corporate groups and five day surfing camps. We can also design a custom made package to suit your needs.

Jervis Bay Fishing Charters is locally run from Huskisson, Charters leave from Huskisson wharf which is easily found in the centre of Huskisson; there is a large and safe parking lot which is 20m from where Reel Time leaves for the day.
Reel Time is a 27 foot fast planning vessel capable of up to 30 knots and is the fastest fishing charter vessel in Jervis Bay. She comfortably cruises at 17 to 20 knots this allows your group get where the fish are very quickly.
With two bunks, a toilet, and a bimini cover (sun and rain cover), Reel Time is not only comfortable, she is a very capable and stable boat in all conditions.
