The Gunyah (aboriginal for meeting place, or place of shelter) is at the heart of the camp. Designed by Sydney architects, Nettleton Tribe, it is a chic space built high off the ground to enjoy the sea breeze and a wonderful position amongst the tree tops. In Summer, the sliding doors open up for outdoor dining on the verandah, providing a bushy backdrop from which to enjoy meals and observe the goings on of our resident possums, sugar gliders and birds. In Winter, an open fire and candlelight bring warmth to the room, and cosy lounges are a perfect place for curling up on after dinner. John Evans comes to the The Gunyah at Paperbark Camp with an impressive background and extensive experience in leading restaurants in the UK and Sydney. Of Welsh heritage, John trained at the 1 Michelin star 'The Arkle' at the Grosvenor Hotel in Chester. In Australia he worked for the Merivale group - initially with Luke Mangan at Bistro CBD, then as sous chef at Est, returning to Bistro CBD as head chef. John then opened his own restaurant 'Northbridge Bistro' where he built a loyal following, many of whom followed him across the bridge to The Restaurant at 3 Weeds, Rozelle. In his two and a half years at the 3 Weeds John created menus that emphasised the best seasonal ingredients and the restaurant became a favourite amongst locals and Sydney siders alike. He left the 3 Weeds after winning many awards including "Best Restaurant in a Pub in Australia" John will continue his philosophy of preparing ingredients well, treating them with respect and creating simple yet elegant dishes which he has become renowned for. Hawng Khrua Thai Restaurant Co-owners Colin & Marion,

Colin & Marion came to Huskisson on holiday and ate at their favourite Thai Restaurant. When the restaurant came on the market they made both a sea change and a career change and became passionate restaurant owner/operators.

Colin attended Nowra TAFE to hone his skills and together with Marion has travelled throughout Thailand attending cooking schools and soaking up the culture.

The Hawng Khrua Thai is open for diner from Monday To Saturday from 5.30pm (except public holidays). Our menu is quite extensive with over 50 items on offer.

We also cater for group bookings, and are licensed with a wine list consisting of some fine local wines and a range of beers including Thai Singha beer.
